Steps to get delicious caramel

Heat over medium heat and mix 150 grams of sugar with 10 grams of cold water (you will pour it into a saucepan). After the sugar is diluted in the water, nothing is done, just wait for the water to boil, and then immediately remove the pot from the fire when the caramel reaches the desired color. Dark caramel will obviously have a thicker consistency. It all depends on what you want to use it for, whether you want liquid, soft caramel or hard caramel.

Different types of caramel and their uses

For example, light caramel, very liquid, is very popular and used to spread on cakes, pies, and famous disguised fruits commonly seen at Christmas. To make this type of caramel successful, the trick is to add a teaspoon of vinegar or lemon juice before it starts to color.

Golden caramel is very popular with great pastry chefs who use it to stick together a small puff. Since it needs to harden slightly, it is not recommended to add lemon and vinegar.

As for the dark caramel, we use the latter to cover the mold, for example when preparing spilled cream, decorating pudding or ice cream, or perfecting the decoration of the floating island.

Finally, you can also make milk or cream caramel sauce. To do this, simply add in pre-cooled milk or caramel cream. Don’t hesitate to decorate ice cream or fruit with this version of caramel.
